    That's a lovely burger, but yes the bacon could stand a minute longer in the pan.

    That was the purpose of the carrot purée. The asparagus was light covered in olive oil, sea salt flakes, cracked black pepper and parmesan cheese. The mash was standard, with cream cheese, butter, milk and S&P.

    It's been fish just about every night lately in the Mendip household for obvious reason, but to mix it up a bit I've also tried a couple of new ones for me.

    Last night I dug out the minced lamb from the freezer and made my first shepherd's pie.



    I used the exact same recipe as for my cottage pie but substituted minced lamb for minced beef, and used a lamb Oxo cube in the stock instead of a beef Oxo cube. I find that Bisto powder with flour makes the best stock for any of this kind of thing.



    Lovely!



    I think that all things considered I prefer cottage pie, but the lamb made a nice change.

    And while on the subject of cottage pie, a few nights ago I had my first ever attempt at Mexican food.



    I dug out a bagged up portion of my cottage pie from the freezer and made up a couple of what I think are called burritos?

    Topped with cheese, these went into the convection oven.



    The burritos later joined the chicken fajitas on the plate.



    In my defense I was a bit tired that night... but while maybe not the most aesthetically pleasing of meals it was still delicious!
