    A cheap lasagne

A person can make this dish very easy in Thailand. It just takes some common sense and an oven.

We start off with this. True, I have bought the ingredients in the states, but the same ingredients can be found in Thailand.

First, the meat has to be browned. Notice I am using ground beef and Italian sausage. In Thailand I used ground pork from the wet market.

    Brown the meat.

Then you drain the meat. You don't have to be fancy and buy cooking tools.

Add a chopped up onion. No need to measure.

    Add the drained meat. Stir.

Common sense says add to water. One doesn't want concrete nor does one want soup.

I am sure it requires an oven at some point. Could i cook it in a pot on my BBQ?

Simply cover the meat and sauce and simmer for awhile.

I use a casserole dish in order to complete my dinner. All I do is start to lay everything in layers. Up to you really...

This gives you an idea on how I layer my poor boy lasagne.

Layer upon layer is the main key to an excellent lasagne.

    Getting towards the top.

Once you have completed the layers place the dish in the oven at 400F for about an hour. Do not add the final layer of cheese until the last 10-15 minutes.

That's it. The cottage cheese really enhances the flavor of lasagne.

Looks good. I always do the first layer meat side down to stop the pasta sheet sticking to the pot. And if your cant find the cottage cheese in Thailand then a tin of Preggo Cream sauce from tesco will do you a second best.

^ Or just make a bechamel as used in the original recipe. Only need butter, flour, milk and a pinch of nutmeg.

I can find it up country at Makro, so the bigger centres and shops will certainly have it.

    Correct.

Lotus, Big C and Carrefour all stock it in Pattaya.

    Ricotta works too.

You can make your own by heating milk to just on the point of boiling and adding vinegar (about a tablespoon to each litre), and draining the curds off it through an old pillowslip in a colander.
