    Simple Beef Goulash

    This is a great recipe for beef goulash. It is a one pot meal so does not require a full kitchen to make. Any leftovers you put in the frig or freezer will get better with time. You can use inexpensive beef as cooking time will soften the meat so tightwads can enjoy too.


    Ingredients

    2tbsp Vegetable oil
    2 Onions, chopped
    1 Kg stew beef – chuck, round or whatever you can find
    2 garlic clove, chopped
    ¼ tsp caraway seeds – same ones as in rye bread
    2 tbsp paprika
    2 tomatoes, chopped
    2 x 14.5 oz cans Beef stock
    2 Green Peppers
    4 – 5 potatoes








    Rough chop the onions and garlic. Heat the oil in a good sized pan and add onions and garlic and cook for 10 min. Stir frequently.





    Add the beef and cook another 15 min until browned. Stir frequently.






    While the meat is browning chop the tomatoes and peppers.





    Add the tomatoes, paprika and caraway seeds and beef broth. Cover and cook for 90 min or longer if you have time.





    Add peppers and cook another 45 min. When not in the mood to make mashed potatoes you can just cut up the potatoes and add them with the green peppers.






    Ready to go





    When first made I like to serve over mashed potatoes like this.
