Who's Got The Biggest Sausage. (Or The One With The Most flavour)

I came home yesterday and the misses was in the middle of making some sausages. They were Thai style, very garlicky but great with sticky rice. I knew she made them but I don't really remember ever seeing her do it.

Anyway, it wetted my appetite big time and I will soon be giving it a go for myself (with disastrous results I dare say) I think I'm going to try a lamb sausage with a bit of a Moroccan type flavour first, and then keep experimenting after that.

I've started this thread a little bit early to be honest, as I'm at the thinking about doing it stage, rather than the, here are the photos of what I've done stage, but I thought if anybody else fancies giving it a go or already has, then they could post the results or share their knowledge here.

If not, I'll be back in a week or two to show you my pathetic efforts at making sausages for the first time. Should be worth a laugh at the very least.

Love sausages, try this mate
its a traditional portuguese pork sausage

5 lbs pork butt, coarsely ground (my butcher does this for me)
3 tablespoons paprika
2 tablespoons minced garlic
1 tablespoon salt
2 tablespoons liquid smoke (adjust to taste or depending on the brand you use)
1/2 cup red wine
1/2 tablespoon sugar
2 teaspoons fresh ground white pepper
3 teaspoons dried oregano
1 teaspoon fresh ground black pepper
2 teaspoons cayenne pepper
Directions:

Combine all ingredients and mix well, if you can, leave for several hours so the flavors can develop.

Stuff into hog casings or make into patties.

You can omit the liquid smoke and smoke on home smoker until internal temperature reaches 160°.

Last night I made some knackers and bratwurst from Foodland. Pan fried and then added to fried onions and a reduction of beer and butter. Served with mashed potatoes and a gravy that I whipped up. Excellent.

Bobcock have you tried Bunter's sausages? They are OK with eggs and chips! 230B/kg.

they are sold sometimes on the street, they are really quite huge, and very flavored - couldnt find with what...

i had that sausage at least one week in the stomach... it wasnt bad, but sort of weird... wouldnt buy again...

Mash at Chern Chim's in Udon claims to have the biggest sausage. The ladyboys that hang out near his old shop say different. Don't know who is telling a lie. But they do say he has the best tasting sausages in Udon. About the only shop that handles a wide range of farang food products at a decent price. Cheaper then Villa.

I am happy that in America we make sausage patties without the need for casing. Especially in the south. I have a great copy cat recipes for all the Jimmy Dean brand. They all come out excellent if you add more fat to the Thai pork. I prefer ones with casing these are just easier and faster to make.
