    Fish balls in mash and stuff

    Seeing waynes thread (Mrs. Kerr’s Thai Sour and Spicy Shrimp) gave me some ideas, so I decided to make my own fish ball thingys, the only thing I needed was some fish, luckily the 7/11 stocks tuna so it was a quick trip to the 7/11 and then time to start making my dinner.

    I hit my first problem when the gas bottle run out after about 2 minutes while I was boiling the potatoes, by this time of course I had brought every poxy thing I needed upstairs, so now it was time to take it all downstairs to cook it there, things like the bread crumbs were in the 5th floor freezer etc etc, so I was up and down like a bloody yoyo, of course I forgot the gas oven downstairs was no good, luckily we also have an old electric one down there, so I got my potatoes boiled and I was ready to start mixing the stuff up, my girlfriend then told me the socket for the electric oven was no good, so now its take every poxy thing upstairs including the foking electric oven.

    Anyway I done all the preperation work downstairs, mashed the potatoes, chucked in a Pizza Hut packet of chilli, some butter, grated up some onion, half a tin of tuna, a few pieces of garlic, mashed it all together, made sort of round balls out of the gooey mess, rolled it in flour, rolled it in egg, rolled it in breadcrumbs, and then messed up a little bit, the wok she uses down stairs is very thin, so heated up a lot quicker than the pans and that that I use, plus with the balls not being very round and me not putting enough oil into the wok I didn't get that nice even brown that I think I was supposed to get, its probably best to chuck them in your deep fat fryer I think, or at least get them round so they don't sit on the flat spots, still they turned out ok and did taste nice, obviously couldn't taste the fish with all the garlic and onions in them but fish don't taste of much anyway does it.



    The potatos ready to boil with salt and oregano added, I am not sure if the oregano adds any flavour but we have so many packets from pizza hut and that and it's the only way I can find to get rid of them.



    I think next time I will use an ice cream scoop to get them nice and round, anyway this is all the gunge mixed together and sort of roundish.



    And hey presto, okay they don't look as good as waynes but they tasted pretty good, the packet of ketchup in the first picture I was going to mix in with everything, but with going up and down the stairs god knows how many times I forgot, maybe tomorrow

    You forgot to put em in the fridge after you put the crumbs on didn't ya?

    You didn't mention anything about the fridge in your thread did you? hmmm, I had to come up here about 3 times to check to see where I was going wrong anyway, must have missed that bit

    If you have left over food for whatever reason, just mash it up with mashed potato make it into balls or patties and deep fry it, or shallow fry it if you don't have a deep fryer, and chances are you have something edible although you probably won't impress your TG unless you add chilli or do some prik nam pla on the side.
    This sort of food should not really be photographed.

    Used to make something similar with tinned salmon. Very nice. Add a dash of Wostershire sauce to the mix and eat with Tartare sauce.

    BTW, nothing wrong with flattening the ... erm ... food items. They're more manageable and you call them rissoles.

    Oh, and a twist of fresh lemon is nice with the fishy things.

    Seems I hit a few problems last night when I made my mashed fishball concoction, the potatoes were left over from the day before so came from the fridge, the half a can of tune came from the fridge, now I am not sure if it was because the stuff was too cold or whether adding a sachet of ketchup sort of messed it up, with the potatoes being cold it gave me a longer frying time, unfortunetly I didn't realise that when I done the first couple and they sort of collapsed on me, anyway I baked them for longer this time and used a different fast food places sachet of chilli powder, damn that was spicy, the ketchup gave it that little bit of sweetness and they tasted damn good even if they don't look so good in the picture

    Did a very tasty gourmet bubble and squeak a couple of weeks back with left over veg from a lamb roast. Actually it was really a veggie bake, using one of those corning ware oblong type baking dishes. Sorry no pic's but-

    1- Chuck the offending letovers into a plastic bowl. We had spuds, pumpkin, peas, Baked onion & cabbage. Mash them up, but not to the point of pureeing them.
    2-- Add some ground pepper too. I also mashed in a small amount of dried oregano, this or mixed herbs or thyme adds a nice little touch, but use sparingly. If you add rosemary, add very sparingly.
    2- Rub butter or marge around the dish, plonk in the veg mash & smooth down.
    3- Gourmet time. I added some creole seasoning on top, but paprika or Worcester sauce would prolly do the trick too. Use your imagination. then added a couple of slices of that Thai Bologna/mortadella with little bits of chilli in it, and topped off with grated cheddar.
    4- Bake it in the oven for about 20-30 minutes. It's done when it's starting to brown at the top and edges.

    Even the Isaan mother in law said she liked that one, but maybe she was just being polite.

    ... Mrs. Kerr just about pissed her pants when she saw this. She says next time were in Jomtien she'd be happy to pop over to show you how to make the "special sauce".

    I seem to be getting better at making fish cakes, this first picture shows my sliced garlic, couldn't be bothered using my garlic crusher just for 2 cloves and I never got the hang of whacking it with the side of the knife like Thais do, they seem to escape when I try that, 2 dried sliced chillis, and a small onion grated.



    Boiled potatos with ketchup, tuna, butter, salt and pepper, chuck the above in and mash it all up.



    Roll them into balls and coat with flour, look like donuts.



    Roll around in the egg then the bread crumbs, this have now been deep fried, they could have done with another minute I think but most didn't collapse on me, then into the oven for about 40 minutes.



    The finished product, enough for a family of three sadly neither my girlfriend nor my son are willing to even try stuff I cook anymore, still, all the more for me

    I seem to be getting worse at making these fishball things, these I made a few days ago, there was about 6 of them in total, but they all sort of collapsed in the oven, I think it is the ketchup and butter that causes that, they tasted good though, just look a bit of a mess
