    I've got a dozen fresh Canadian Scallops on the go with chorizo and lemon, hope i don't fvck it up.

    ^ dry fry the sausage, remove but leave the oil. fry the scallops briefly 30 secs each side and remove, turn off the heat, squeeze the lemon in pan throw in sausage and swirl it, plate the scollops and pour over the pan contents.

    don't cook the scallops for 4 minutes each side.

    You know that for a fact do you?. Was it hard or soft chorizo?

    The whole point is liberating the oil, how are you going to do that without cooking it, speak to it nicely.
