Man cannot live on pies alone. Today's main meal is going to be some pan fried Cod loins with a parsley sauce, on a bed of garlic mashed potato.
Assemble the makings.
The potatoes were peeled, chopped and with the garlic cloves added to some salted water. After 30 minutes simmering, drained and with some butter, cream, and a raw egg, pureed with a blender and put in a dish. This kept in a warm oven for later. So, the sauce. Put some milk, bay leaves, grated nutmeg, and finely sliced onion into a saucepan and brought up to a simmer.
It was then taken off the heat and put to one side whilst I made a simple roux in another pan. The milk was then strained into a jug, and gradually added to the roux to make the sauce, whisking all the time. Once it had started to thicken, the chopped parsley was added.
The cod is going to be pan fried in a mix of butter and oil, but first the loins patted dry and coated in some seasoned flour.
On medium heat, about 5 minutes each side.
Then it was plating up time. Potato out of the oven, cod on the potato, sauce over the top. Really very tasty.
