This is one of my favourite pork dishes, using in this instance some pork shoulder steaks.



First off, pound some garlic, corander root, and black pepper corns into a thick paste.



Spread the paste over the meat, and add a couple of spoons each of brown sugar, oyster sauce, soya sauce, and olive oil.





Mix everything together so the meat gets a good coating, then put into the fridge for an hour or so to marinate.



Get a large pan with a lid, and brown the meat both sides for about 10 minutes.





Add water sufficent to cover the meat, bring to the boil then simmer for about an hour.



When the liquid has mostly reduced, add whatever vegetables you fancy. In this case it's matchstick carrots and cauliflower florets.



Put the lid back on after adding the vegetables, and after about 10 minutes it's done. Mix everything together and serve with some fresh coriander leaves.
