First time in 12 years that my buddy and wife have not joined us here in Phuket for Christmas and New Year. They come armed with the obligatory box of Walkers Shortbread, so there is a big gap in our coffee time selection this year.
Rush of blood to the head this morning, M'Sahib is visiting one of her friends later and asked that I make a Gingerbread loaf for her to take with her. That prompted a look at shortbread recipes, and lo, simple enough to make.
Mixing butter and brown sugar together into a cream.
Flour is then added and kneaded for a while to get a dough like mixture. Roll out and cut into strips and then individual biscuits, pricking the tops before they go in the oven which prevents steam being held and inflating the biscuits (so it keeps them dense).
25 minutes in the oven until lightly browned, then cooled ready to box up.
M'Sahib got her Gingerbread for her first footing also.
