And the one bottle out of the two that 'worked' (The other one the yeast didn't seem to bloom and basically sank to the bottom).
Was excellent. Refreshing and crisp and a tad sparkling. You don't have t call it wine, or cider, but it was very drinkable and quite alcoholic.

Go get some fruit, yeast and sugar and try your own homemade' wine' just for the hell of it instead of giving people shit who are just giving it a shot.

Anyway, I don't use plastic gallon 'buckets' I use large glass jars, 5 litre and 8 litre the tops of which are too wide. Someone suggested balloons for the smaller bottles but I didn't have any on hand.
Anyway, in a week it'll be a month for the bottles and they say it should be good by then so I'll let you know how it goes. The last two bottles were a month.

I used to just rinse out, partly fill with boiling water, add sugar until it stopped dissolving, add whatever juice was on sale at the time then wait till it cooled down to a warm temperature that wouldn't kill the yeast. Getting the yeast in at the right time is critical. Too hot and you kill it, too cool and it won't activate.
The boiling water does the sterilization and gets some more sugar dissolved in the mix.
Some people think it don't, but it be.
I found using a starter bottle for the yeast was very successful.
Using a clear, preferably sterilised bottle, put in some warm water. (For a 33cl bottle, about a third of the bottle, but it's not critical).
Add half a teaspoon or so of sugar.
Give it a shake until the sugar has dissolved.
(Or mix sugar and water in a bowl and stir it before putting it in bottle.)
Add yeast to bottle.
Give it a shake, and loosely put a piece of cotton wool in the top of the bottle. (To stop flies getting in.)
Leave in a warm place. (No problem in Thailand).
After 15 minutes or so, it will have a layer of foam on top as the yeast is activated.
Give it a shake, and pitch it in the warm, (certainly not in any way hot), juice mix.
I brewed for many years, beer and wine, and found a starter bottle to give 100% success.
