    Slow Baked, Honey Grilled Rack O' Ribs.

    Well I continued on with my rib experiments this weekend after picking up a small (1/2)? rack of pork ribs in Big C today. Only 70 baht would you believe. Perhaps he weighed them wrong.

    I actually begun with a homemade Carbonara dinner (Thai German Meats have got nice, European style rashers now btw, 4 in a pack for about 75b).

    Then stuck these in the oven for 2 hours at 100 degrees C, timed so the oven would Bing just at half time of Man U V Arsenal. Then I started on the beer in anticipation of a right Arsenal 8-2 hammering.



    Threw in a good bit of rosemary and thyme in order to really make the kitchen smell nice.

    Then sprinkled on some pepper and chili powder and most importantly, rubbed on half a shot of Bourbon.

    Then wrapped up the tinfoil and stuck 'em in the oven. 2 hours later. Bing.

    I made up the marinade of paprika, cumin powder, chili powder, salt and pepper, soy sauce and a few big dollops of honey.

    A new client is a bee keeper and keeps me in fresh honey, I have to say that it is about one million times nicer than any store bought stuff. anyway, lather it on after slightly cutting into the meat to let the marinade get in there.



    Now under the very hot grill until it burns.



    Was so tender that I couldn't turn it over without breaking.



    Onto the plate with some sticky rice just in time for the second half.





    Was pretty good...

    you had the oven run for 2 hours for 100 grams of meat???

    and it got that black in alu foil???
    oh sorry, saw it now... 2 hours oven and then grill... geez... you lucky, that after that procedure anything was left, actually...

    you have an electricity run oven?

    Love spare ribs and so I shouldn't be in here drooling over them .

    Had some a fortnight ago, bit down on a little bit of rib and cracked a tooth. The resulting root canal work and crown is costing me 15,000 baht.

    So....my advice is eat with caution and watch out for the small bones.

    They look rather tasty CM. I do like having a proper oven and the one I have now is a convector as well so like having a turbo I may have to follow suit today if they have any down the market this morning.
    I did discover a nice BBQ sauce for those times when you just can't be arsed to mess about knocking one up. You get it from the CP shops that do the frozen foods. Hot BBQ sauce 40 Baht. Very thick and sticky and has a nice tang to it as well.
    Treat everyone as a complete and utter idiot and you can only ever be pleasantly surprised !

    Rubbed in Bourbon and some rosemary and thyme thrown on, wrapped up in foil and 2 hours at 100 degrees C.

    Then unwrapped and basted with the soy sauce and honey mixture (see the OP), and under a hot broiler until it begins to burn. Turn over and do the same. Probably about 5-7 mins per side.

    150bt a rack is about right.
    If you go to Foodland to buy them, the butcher will bring out the whole bastard rib cage and you can get them cut to any length - no charge.

    First, I think that is the one I have satonic. Just has a nice smoky flavor compared to the sweet Heinz. Fountain at Foodland is under 100 baht I do believe. I will check on Saturday.

    Albert correct you are, we often order a day in advance if we know we will be back. Then you get really prime pork. The butchers at FoodLand are good.

    In Big C it said 90bt on the shelf tag but then when she rang it in it was only 60bt.

    holy shit, go back and buy more. I will buy them from you for a profit of 5 baht a bottle at that price. At the piss up in December. My kids just love it. Another tip try the Praise Italian dressing out of Foodland as well. Finally converted my 14 now 15 year olds to a real nice salad dressing. Not freaking Thousand Island. Again its out of Oz.
