Well I continued on with my rib experiments this weekend after picking up a small (1/2)? rack of pork ribs in Big C today. Only 70 baht would you believe. Perhaps he weighed them wrong.
I actually begun with a homemade Carbonara dinner (Thai German Meats have got nice, European style rashers now btw, 4 in a pack for about 75b).
Then stuck these in the oven for 2 hours at 100 degrees C, timed so the oven would Bing just at half time of Man U V Arsenal. Then I started on the beer in anticipation of a right Arsenal 8-2 hammering.
Threw in a good bit of rosemary and thyme in order to really make the kitchen smell nice.
Then sprinkled on some pepper and chili powder and most importantly, rubbed on half a shot of Bourbon.
Then wrapped up the tinfoil and stuck 'em in the oven. 2 hours later. Bing.
I made up the marinade of paprika, cumin powder, chili powder, salt and pepper, soy sauce and a few big dollops of honey.
A new client is a bee keeper and keeps me in fresh honey, I have to say that it is about one million times nicer than any store bought stuff. anyway, lather it on after slightly cutting into the meat to let the marinade get in there.
Now under the very hot grill until it burns.
Was so tender that I couldn't turn it over without breaking.
Onto the plate with some sticky rice just in time for the second half.
Was pretty good...
