Vegemite is made from leftover brewers' yeast.
Vegemite is rich in vitamins B1, B2, B3 and folate. A single 5g serving of Vegemite provides from 25-50% of the recommended daily intake for these four vitamins.
So is Marmite.
Home made Marmite/Vegemite Recipe
Home brewers will like this one.
Collect that yeast sludge at the bottom of the brew barrel and add a tablespoon of salt to about a pint of the stuff, stir and let it sit for a day or two.
The salt will cause the yeast cells walls to break up, releasing the goodies inside.
Add two pints of water and stir the mix up and heat it, simmering the brew for about ten minutes or so, stirring it gently all the time.
Take off the heat and let it cool.
The yeast cell walls will separate from the extract, and the liquid can be poured through a muslin cloth sieve to trap the dead yeast cell walls and the resultant liquor is then simmered in a pan to reduce it to a paste.
Keep scraping the base of the pan with a wooden spatula to stop it from sticking and burning, otherwise you'll get that burnt woody taste. A double boiler works better.
The end product is yeast extract, Marmite or Vegemite.
Marmite was a French invention, " petite marmite", a "small stock pot", usually containing a brown stock with added veges and bits of meat.
