    Basic curry sauce.

    This will do for most curry dishes.
    Don't rush it. This should be enough for about 4 batches and will keep in the freezer.

    3 onions.
    6 fleshy green chillies.
    2 inch piece of ginger.
    6 garlic cloves.
    1 teaspoon of turmeric.
    1 teaspoon of corriander.
    1 teaspoon of cumin.
    2 tablespoons of tomato paste.
    3 tablespoons oil or ghee.

    Add oil to wok. High heat and fry the onions for about 10 minutes.
    Don't brown the onions.

    Now chop up the garlic, ginger and green chillies.

    Add to the pan and cook on a lower heat for 10 minutes.

    After they become translucent turn the heat down and add the spices.
    cook very slowly for 5 mins.

    After cooking leave to rest for 10 mins and then place into blender adding about a half pint of water.

    After blending place back into wok and add the tomato paste.
    Slowly cook for an hour, stirring occasionaly...Cook for longer if you can as it adds to the richness of the sauce.

    So, now you have your basic curry sauce.
    Let's make Charley's cheeky chicken to go with it.

    You'll need...
    4 skinless chicken breasts.
    2 cloves of grated garlic.
    2 inch piece of grated ginger.
    Juice of 1 lime.
    1 teaspoon of chillie flakes.
    1 teaspoon of olive oil.
    1 tub of natural yoghurt.
    1 teaspoon of tumeric.
    2 tablespoons of tandoori curry paste.

    Mix ingredients and marinate overnight.

    Fry the chicken in hot oil (in batches.)
    I then usually add these ingredients.

    Add some of the aforemade basic curry sauce...Cook until tender.
    Finally adding a couple of teaspoon's Garam Massala.
    Enjoy.

    If you'd like a nice little side dish.

    1 sliced banana.
    Some sliced red pepper.
    1 tub of plain yoghurt.

    Turmeric, cumin and corriander are readily available at our fresh market.

    The tumeric is in powder form. The other two are in seed form. Just toast them a little bit and then get the Missus' to 'bash' them up!

    I like to add a bit of tumeric to the rice cooker to give some nice yellow rice.

    I do give her a bit of currie now and then.
