But here is a fine way to roast beef, especially Prime Ribs.
Get a heavy pot that your roast will fit in and be below the top, spread 2 cm of rock salt on the bottom of the pot while your oven is preheating to HOT like 400 or 450 deg F.
Put your roast that you have wiped dry with paper towels in the pot, stick in a meat thermo if you wish but point up, and cover all the roast with rock salt to completely cover to about an inch on top, put in the oven and roast for 15 minutes per pound for rare, take out and let set for 15 minutes and crack off the salt and brush off any that sticks to the meat, put on a plate and carve..
Now salt roasting is the way to roast beef.
