2 hours with Bella in the kitchen & Stella on the sofa does sound passable.

now my inclination is to rub with oil and salt, fry 4 mins one side, turn fry for 3 mins other side but add butter and then keep basting with the butter for another 4 mins. Its too thick for the griddle pan.

I'm pleased that you're having the steak tonight and respectfully keeping Good Friday meat free.

that's a negative big Hal, we're in the process of hanging one on tonight and i reckon tomorrow will be too soon to cook them so Saturday feels right. They are dry aged and the near 2 foot block he sawed that from was gorgeous, the end was black.

Sirloin's for dinner last night. Couldn't go past that marbling.

    Dinner-whatsapp-image-2023-04-06-5-a

Add EVOO and a rub and leave for a few hours.

Ensure that one hydrates while waiting...

Served with mushies, asparagus, mash and a chimichuri sauce (made a few hours earlier and then allowed to sit at room temp to let the flavours meld).

700gr is too thick for a griddle pan, but you could use it at the very end. Steaks that size have reverse sear written all over them.

Aye. The only thing that wasn't great was the calamari, but the Ship Canal isn't really renowned for fresh seafood.

You'd need 3 pints to wash that dry shite down.

Nothing like a traditional British dinner on Easter Sunday.
