    I always eat my potatoes with the skin on. I do have a potato peeler but usually only use it on carrots and usually my fingers. All the goodness is in the skin, even my Nivea hand lotion skin. Unless i'm making mash or champ.

    For those not in the know, champ is a Northern Irish dish which is mashed potatoes with spring onions mixed in. Yummy. Collcannon is Eire mash where they use cabbage instead of the scallions (spring onions).

    Lesson over.

    It was only a few years ago that i learned that cillantro is in fact coriander. Funny folk, americans.

    Well there you go, that's always been a favorite. Never knew it belonged to N.I. but it's a great way to lift plain old mashed spud that's for sure.

    So here's tonight's little get together, baked Norwegian Salmon with sea scallops and some salad. Tasty and filling enough but boring . If the weight keeps coming off at this rate (1.5-2.5 kg per week) by some daily exercise and eating light meals like this though, it's worth it.

    The bottom half broke off when she was getting it out of the oven but still a good effort since she is not a very good cook.

    Starter - Prawns cooked in beer, lime juice, garlic, onion, bell pepper, red onion, spring onions and butter.



    Main - Roast chicken stuffed with garlic butter under its skin cooked on a bed of onion, garlic and carrot.



    Side - Fully loaded 'Hasselback Potatoes' stuffed with garlic, cheese, butter and bacon served with sour cream and chopped spring onion.



    I still only eat the breast

    Prawns great and the spuds look good. Chicken not brown enough.

    It's a new oven so getting used to it, although it wasn't as brown as normal the missus cooked it and it tasted great.

    The sour cream was from villa, in a white pot with red writing. It's ok but doesn't compare to what I'm used to back home.

    Dessert - I wouldn't be allowed to post those photos
