Splashed out at a Farmers/butchers today for father's day.

These are 400g Ribeyes, I watched the 3/4" steaks being cut.

These have now been seasoned with salt, pepper and some oilve oil and are sitting in the fridge for an hour until everyone arrives.

The charcoal bbq is gonna get fired up soon, I'm determined not to fvck this up and see if it's worth the extra expense.

Very nice. As long as you didn’t Q them for a quarter hour or more I’m sure they’ll be fine.

I was going to say that they looked like they weren't brought up to room temp before cooking, in the dinner thread. They looked like they had been cooked while still cold. It appears there's a reason why.

Anthony BoreDane gives good advice about steak. Do nothing.

Especially after cooking (90 seconds one side, 60 seconds the other side). Remove and do nothing. For 7-10 minutes. Do not wrap it. Do not put it in an oven. Do not prod it. Do not pierce it. do not touch it. Do absolutely nothing. Just leave it.

Probably not as cold as Mao's trendy kebab style orders from nimman.
