    ^^ You know I cooked that duck a couple of weeks back and complained of the greasy mess. I collected a cup of duck fat. Was wondering what to do with it…

    I accidentally picked up lean ground beef the other day. Boo. Looked at some ways to add fat to make burgers.

    Don’t want to get all shi-shi on ya’ll but I put a couple of tablespoons of duck fat in my pound of mince.

    Damn, it was good. And, it is really a thing.

    You can also mix in butter or, wait for it…..bacon grease.

    That's true. My ole ma used to keep a pot of bacon grease in the fridge for all cooking. Unfortunately, I'm not allowed to do that anymore with my family for religious reasons.

    I did that the last time I got a 90/10 beef. I learned that from my father, who would save all the bacon drippings to add to the ground venison that he hunted.

    I find that if I add a teaspoon of olive oil to the meat as I mix it up that tends to help it patty out nice and cook very well.

    Actually, that is a misconception. Bacon is actually fairly healthy as long as you buy the uncured product.

    Dry cured back bacon is what you want...

    JHC give it a rest. Streaky bacon is used for burgers it would seem fair to say. All bacon is freaking cured. But American bacon comes from the pork belly, while British is higher on the pig. In reality a loin. Both are really great. The Canadian bacon sold in America is really similar to the British style.

    One way restos add fat content to their burgers is by mixing in a bit of ground pork into their burgers. To add a binder to a burger is burger heresy, it should never happen!!!!!!!!!

    That's what happened to the Aussie's...they started adding fooking bread crumbs to their burgers and figured if they were already stooping that low, they might as well put beetroot on their burgers too.

    The link says that all bacon is cured. However, the USA seems to think that curing meat with natural products means they can call it uncured.
    Curing meat as a means of preserving was traditionally done using natural products.

    My view still stands; it's still a processed meat no matter how natural the preservatives.
