Continuing to refine the potato cake recipe and cooking in preparation for our homestay opening in September. Was not happy with recent efforts so went back to a basic recipe and decided to fry over a medium heat in good quality olive oil. Looking to get a golden outside crust and a creamy, salty and garlicky inside. Very happy with this mornings effort. Full homestay brekky will be eggs, pork sausages, potato cake, baked bean, sauteed mushrooms and thick toast. Toast might be from home made bread but am yet to start work on that.
Thanks SKkin. Sausages are nothing special, get them from Makro. I've learnt over the years one of the measures of a good breakfast experience is feeling full into the day, hence our homestay breakfast will include overnight oats, potato cake and if I can get motivated, thick toast from home made bread...carbs, carbs and more carbs. All three items lend themselves to our being able to customize them a bit and hopefully people will notice and remember. Already got our version of overnight oats down pat, now working on the potato cakes and as I said, just not quite motivated enough to start on making bread. Regards, -BiP
I'm making mash specifically as I'm trying to get them right and repeatable. Want to get into the habit of making them the afternoon before breakfast so all I have to do is fry them on the morning. Recipe is dead simple...two parts mash to one part all-purpose flour, diced onion, garlic butter, salt, cracked pepper, parsley flakes and an egg. I make the mash first using a little garlic butter. Then let it cool to a point I can touch/mould, add the other ingredients and form into flatish cakes. Put them in an airtight container in the refrigerator overnight and cook in the morning. ^Thanks BiP...think I'll write that down. Potato cakes are good enough to make mash just for that purpose. Might start doing so myself. Besides potatoes are still reasonably priced here...unlike other things.
As I have stated elsewhere the lady and I have had a nasty bug she brought home from work so we have been staying in and she has been doing a bit of cooking..

But if I've been on the pish the night before, then a tea, followed by a strong, sweet coffee which I can enjoy slowly.
I have a very Latte first thing in the morning. Try to stick to one a day.
Though an other one's on me mind now ya fooker.
