The way Thai doctors dish out antibiotics like sweets, I wouldn't be surprised if many of these bugs are resistant to them as well.

If water borne infection was the cause, she has either allowed some to enter her mouth, or it has entered her body via a break in her skin. In both cases, it was preventable.
Or she could have ingested it. All she had to do was take her shoes off and maybe later wipe her mouth without washing her hands.
"Unable to keep food down" implies it was ingested.
Washing your hands frequently (and properly), preferably with a decent antibacterial soap or handwash, is one of the best ways to avoid catching 'flu and other bugs.
Not doing so is a great way to increase your risk of infection.
I got a small cut on finger just above the nail before taking a shower in a hotel in Korat, next day it was infected. Fought it off with repeated rinsing (hydrogen peroxide) but could never kill it off permanently until I got back to the States and started applying some antibiotic cream twice a day. Finally killed it off but took a small chunk of skin with it.
Also met a fellow who got a mysterious flesh eating ailment on his arm that sent him off to the UK for treatment and has a nasty scar to prove it.
Some nasty shit floating about in Thailand, even in the "clean" water.

Sorry about your mum Jemma and about the press. Not very nice when they get involved. The press in Thailand is 10 times worse though so at least she passed away back home.
It doesnt bear thinking about what might have happened if she was still in thailand.
