    Nonsense. We bake most of our bread and it is excellent for sandwiches for the first day. On the second day it is used to make very nice toast and any left over is made into breadcrumbs for stuffing pork or chicken. No waste, bread fresh when you want rather than buying it and not using it.

I now know how much water to put with my mixture and this is one of the most important factors in bread making.

    There is a timer on mine and it is possible to set the maker so that bread is cooked overnight and is fresh for breakfast. This is not such a success because unless one gets up to remove the bread from the cooker it continues to cook even though the power is switched off. The bread is still nice but not as nice as my normally baked bread because it is a bit dryer. So, I don't use the timer these days.

    Obviously if the correct flour is not available it isn't worth trying to bake your own bread. The convenience of having fresh bread when you want it is worth the effort put into the preparation and this is especially the case for me as I live on a mountain which sometimes gets snowed in and I don't need to go out to get bread.

    Bizarre though it may seem, I have found that bread placed in the freezer compartment of my refrigerator is a convenient method of providing a readily available supply in the event of confinement to the house.
    Once thawed it is excellent as a standby. Quite miraculous really. Don't Taffies have fridges?

    I sometimes freeze mine but as stated in my post 43 I more often just put it in the fridge with the wrapper tightly sealed with a rubber band .

    Thank you. I shall use your method when I am snowed in in Thailand. Until then, I will bake mine fresh.

    I make pita bread, french loaves, pizza dough without a bread making machine. But I still buy baguettes and sourdough bread from Big C because I am too lazy to make bread on a weekly basis. I do it when the mood stikes me. The best bread selection by far is found at Foodmart on Thepraya Road in Pattaya.

    The best bread in Thailand comes from Songkhla.

    I have so much fresh bread it's coming out of my ears.

    I'm supplying it all over the province and beyond.

    If you prefer second day bread (some do) it's half price and if you prefer 3rd day bread you can buy a massive bag of it off a sweet old lady that hang's around the duck pond for 10 baht.

    White, Whole-wheat, Italian, Pumpkin. Loaf, French, buns of any size you like, finger buns, bread sticks (bar snacks), croissants, dinner rolls, garlic bread...

    License to bread...?
