mctominay was pretty solid last year - no reason to think he wont keep that up

TD that's not a bad first effort. You can keep making changes without incurring penalty points until the start of the season. Midfielders - you are looking for goals and assists and for them to be on the winning team. I don't think its worth investing in 5 good defenders, buy a cheap one and use the money on your Midfield / Strikers. TBH its a bit of a lottery, there are always players who pop up out of nowhere and you'd never have picked them.
Should be a bit of fun, you can get by on not investing too much time on it or really study the games weekly and make adjustments / transfers - sometimes though the more tweaking you do can be detrimental.

Same each position. Get one cheapest option, to free up money for the ones you play each week.
For DF the price difference is less than attackers, and the same amount of points for a clean sheet than a forward gets for a goal (4). A good position to get points from. Especially with a DF that gets up for set pieces.
Remember John fokhead Terry creamed it around 10 years ago with around 30 clean sheets and half a dozen goals off corners.
Really depend on who you've got.
Players listed out of position are the best.
Salah getting MF points for goals and assists could be a goldmine, Martial could be too if he's a starter every game as an inside forward. Bale listed as a DF when playing as a winger and getting around 25 goals/assists one season was the best.
A very good choice. Son for Totting has his moments and is effectively more of a striker for spurs than Kane but he's inconsistent - and injured at the mo.
Lsst season out of nowhere Wolves had Jiminez who was brilliant and cheap at the start and is still only 7.5M - good pick for your cheap striker
