    All this Rendang looks good. Always look fwd to a good Chinese Malaysian Cook to produce such fare. There's a very good resto in Newcastle UK that does a Rendang where you can choose the beef cuts used.

    ^ Pre-Cambrian by the looks of things.


    All the traditional family favourites are coming out this Songkran.

    We've already had chicken fajita/burritos/nachos, two nights ago was rib eye steaks and last night was personalised steak and kidney pie!



    With an extra slither for the holidays.



    Five veg in one meal... and that doesn't even include the potato.



    Tonight is sausage, liver and bacon casserole.

    You have to spoil yerself at Songkran!

    And more than half was veg with a tiny dollop of mash.

    But the big portion of pie really was superb!

    My daughter's name starts with a 'J'. It looks like I'll be away for her Birthday so I made her a 'Birthday Pie'. Well, two Birthday Pies to be exact but we ate one of them. Her name isn't such a secret to be honest as it's been mentioned several times on here already, by myself included. Anyway, it starts with a 'J' and ends in an 'A'.

    I can do any pie you like Snubs, including my signature steak and kidney, minus the kidney if that suits you best. To be honest I have quite an extensive repertoire so just say what you want.

    Anyway, as Snubs mentioned 'liver', here was last night's sausage, liver and bacon casserole.



    This was pretty well a perfect meal... for a dark, cold, February winter day in the UK. It wasn't so suitable for a 38 degree / 40% humidity Isaan evening and I got a sweat on eating it. But what to do when you have bacon that needs using up?

    And I'm not immune to comments about portion size, but I've lost a ton of weight lately by eating only two meals a day and cutting out fruit. It seems that I didn't have a beer gut, it was a fruit gut. I've pretty much cut out the morning smoothies that I thought were healthy, but have replaced the fruit with a lot of veg. You need your roughage, after all.

    This meal was simply a sausage, a piece of liver and a few bits of bacon in a casserole, along with a load of veg.



    And lovely it was too, although a bit heavy for April in Isaan.

    I'm actually OK with liver, it's all that other stuff I can't deal with, tripe,etc. It's offal

    We are absolutely inundated with mangoes at the moment so I tried making up a mango salad, similar to one that the Filipino cook made on the last boat I worked on.

    Not my usual kind of dish but I must admit it turned out OK.
