    The pastry was very delicate as I made it from...
    250 gm flour.
    70 gm butter.
    75 gm lard.
    The gas 'ran out' just as the chips were browning!

    Mince beef pie with chips and peas.
    I'm greening myself as I was correct.

    Nige. Oh ye of little faith. I reckon Dillie made them and they look tasty.
    I'm making my own now and they don't look much different. A lot cheaper than buying!

    Never had you down as one of those expecting the big man down the chimney on the 25th mate

    Today I am doing a nice slow cooked roast pork dinner + I.m gonna make a pineapple upside down pudding with some left over pineapple I have in the fridge + some custard .

    Some of us have cold weather outside you know

    A real nice bit of roast pork today ,, I slow cooked this half price shoulder joint weighing in at 3.5 kilos ! , yeah I know there is only 2 of us , so I ordered a 1 kilo joint Tesco sent me 3.5 , it will get used , sarnies and other meals , so 170 deg for 4 hours very very tender and moist . Complemented with leeks and runner beans from my garden + apple sauce , delicious





    For afters today I made a pinapple upside down pudding with custard , that was delicious to and will do us for 3 meals

    Very nice, but can't you afford proper plates so you have to use leftover floor tiles?

    Nige. Looks delicious especially the roasted potatoes. Carrots could have done with peeling!

    Koojo.
    250 gm plain flour.
    70 gm butter.
    75 gm lard.
    Pinch of salt.

    Sift flour into large bowl. Add butter and lard in small cubes.
    Rub ingredients with fingers to make a breadcrumb consistency.
    Add a little bit of cold water.
    Bring together with flat bladed knife.
    Wrap in cling film and place in fridge for an hour or so.
    Toss pinch of salt over right shoulder and make a wish.

    Thats actually a plastic bowl mate , one of a set of four brightly coloured bowls from Tesco Lotut in Udon Thani , infact to be specifically correct about it it is one of the two surviving bowls I bought , you see my wife although tiny is a bit like a bull in a China shop with regard to crockery. I thought to myself ah ! plastic bowls were on a winner here ,,,,, so she microwaved one , which now acts as a leveller for the dining table , and the other one was in the sink awaiting washing when she lobbed a saucepan straight off the gas hob onto it , which now has found a new life as a door jamb for my shed
