Doing a nice beef stew tonight. Only adding potatoes, pearl onions, and some carrots the last 20 minutes or so.
The first thing you need for a good southern stew is a nice thick roux. So I browned off some onions and garlic in olive oil, added about 3 tablespoons of flour, salt, pepper, and a little Italian spice. You have to cook the roux long and slow as this will be the thickening agent for your stew, and you want the flour to brown up nice so the color of the stew is nice as well.
So the fixings.
This would be the browning of the roux still not nearly dark enough. You cant burn the flour, onions or garlic or the whole thing is shot.
Browning off the beef lightly floured as well.
This has simmered in the oven for an hour plus to tenderize the beef, as it is Thai beef. A rump roast I cut up.
The stock is just one cup of pork stock I had laying around, one cup of water, and one and a half of beer. But now its time to add the pearl onions and potatoes.
Onions and potatoes added, now let it sit for an hour, then put it back in the oven for about an hour to get the onions and potatoes soft and sweet. Then the last thing to go in will be the carrots.
So now I can relax as nothing more to do for a bit. I will remember to get a picture of it plated up. Lately we have been so hungry its been forgotten. A total of just over an hour more to finish it off.
I bet the beer didn't go into the beef stew but into AO's gullet.....
This looks fine and dandy AO, but what about us that have a crock pot? Can you do this again with step by step instructions for doing it with a crock pot?
By the way, you have some biscuits/dinner rolls to go along with this?

^I have the kids favorite. Toasted whole wheat with the same sort of garlic spread you use. Time to go check thanks. I would have gone for a sourdough roll. Vetoed, they said I had been here too long and forgotten what sourdough is. Teach me to send them home last summer on holiday.
Another stew with no dumplings
Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon white sugar
1/2 teaspoon salt
1 tablespoon margarine
1/2 cup milk
Directions
Stir together flour, baking powder, sugar, and salt in medium size bowl. Cut in butter until crumbly. Stir in milk to make a soft dough.
Drop by spoonfuls into boiling stew. Cover and simmer 15 minutes without lifting lid. Serve.

Its Friday night and Jans just finished a 7 day shift but she has still managed to knock a tasty chicken dish with satay and home made chips + salad . Delicious and not too heavy , followed by a nice cup of tea + some chocolate digestives ( bang goes the diet )
