Today Jan's at work so I cooked up a traditional English roast for her ,, well she has a UK passport now so ,,,, twigs and gristle and hedge clippings take a back seat ! Roast beef and yorkshire puds with gravy made from the beef remains in the tin are the order of the day today ,, Oh ,,,,, I guess for the purists the horseradish sauce could have been placed a little more sensitively Get in !!!

This was my humble offering last night -- meatloaf with ham and cheese with a summer salad on the side made with cucumber, capsicum, onion, tomato and dressed with vinegar, black pepper, salt, and half a teaspoon of sugar. Simple as, 'cos I'm not all that flash in the kitchen.

I must admit I aint a great beef chef OO mate, bloody poor infact would rather grace the table with a nice pork joint or chicken any day but my little mate loves beef , bearing that in mind you are correct mate all I can say is I am lucky enuf to still have enuf ivory equipment to recycle it.

OK, so I was thinking fried chicken wings and using Thai sweet chili sauce (nam jeem) as a dip. I got home from the Pak 'n' Save supermarket and discovered that we were out of nam jeem so I thought to myself, how hard can it be to make my own, right?
First, garlic and chilis...three large cloves and some chilis. I did use several more of the little hot bastards than what is pictured. That's the way I roll.
Next, 1/2 cup sugar.
Chop up the chilis and garlic cloves into tiny bits and chuck 'em into a pan with 3/4 cup water, a 1/4 cup vinegar, the sugar, and a 1/4 tsp salt. Bring it to a boil then down to a simmer for three or four minutes to let the garlic soften up a bit.
I added 1 tablespoon of cornstarch mixed with 2 tablespoons of water to make a slurry in which I whisked into the sauce.
Transfer to a bowl, and et voila! nam jeem.
nice looking chicken sauce.
