Chefs night off. She’s been suffering an eye infection – a ton of tests, THB 10k and a weeks worth of antibiotic eyedrops coming to an end. Eye itching and tearing, getting better. Follow-up appointment in a week. Today, a day of rest.
Hit one of the local open air markets. Stocked up on fruits and dinner. Quite a haul for THB 400 – just gotta love it. Mangos, watermelon, chompoo, mangosteen, ya woo sen, gaeng gai and kai luk koi for dinner along with roti and nam Toohey for dessert.

But, she's been cooking up a storm since this covid lockdown. It's all up to her anyway. The house is spotless, watched a decades worth of Thai soaps this past month, she does a couple hours exercise, 2-3 hours cooking, watching TV and chatting on the phone. Ain't the same as visiting. As far as her eye, well, docs pretty certain it's an infection but has not been able to get a test result to confirm his suspicion. The pro side is through testing, all serious problems have been eliminated. Already did two full blown dilations and a half dozen retinal tests and checks.
We are the last day of a weeks worth of antibiotic eye drops. Itching and tearing from the antibiotic drops. But, all things set aside, there is nothing seriously wrong. Will see this next check up. She had to go to a second hospital for her second set of specialized tests. But, again, the doc has eliminated any serious problem. All the important stuff is where it should be and not causing problems. Retina's good - no signs of a tear or a detachment, glaucoma, lens, cataracts, all OK.
She has never been afraid or hesitant with the cooking stuff - always knew just where the kitchen is - but, Thai meals do take a considerable amount of time to prepare. Figure two hours minimum plus cleanup. Good food is ridiculously cheap in Thailand - why bother cooking. Unless of course, you are sheltering in place.

On Sunday I had to saw off the end of our leg of lamb to fit it into the convection oven for roasting.
Glad I did... tonight I used the end bit for lamb stew!
And there was a bit of lamb left over for our new little dog! Sorry Shutree...

Well, i bit the bullet and made my Pork & Green Lentil BhunaMadrasaLoo. Fuk it was hot but actually very nice.
Take 1 ish Kg of Pork, 3 cans of Green Lentils, combined with 2 large sauteed onions, 3 fresh red chillis (for luck) and finally ensure you have properly matured jars of Pataks Bhuna, Vindaloo and Madras sauces. I suggest at least 9 months past their use by date but just to safe i went with 10 months. Throw everything the slowcooker overnight and its ready for Brunch, Lunch and 2nd Lunch - i am stuffed. Tomorrow could be interesting.

You know, i got them in the market..remember when you could buy mystery tins with the label missing. I fished out the peach slices coz i knew Snubs would given me stick. Enough left for 4 square tomorrow and frankly i may have a cheeky bowl later with bread and butter of course.

The slow cooking turns the otherwise inedible vegan staple green lentils into curry infused bloated mini saucers, would have LD breaking into a sweat.
Just over an hour or so in the oven followed by a 10 minute gravy with a bit of stock, a few herbs and a drop of lemon juice.
The crack on the plate adding to the rustic vibe...
^ that would make a fine break in my 2-3 day curry repast.
