Had this Mexican dish for the first time in the US of A recently.
It was magic (and even better with a bit of that habanero lurking behind it).
Gonna have a bash at cooking it later...

^^^ Gotta say, the presentation on that is a bit off-putting. The rather thin sauce makes it look sludgy on the plate. Might have been better to put the sides in small bowls.
Hot sauce I'd guess.
Bit of an experiment up here for a second meal today. Wanted to see how our potato cakes would be with some corn added. Was okay. Had half a tin of them left over so added them to the pork rissoles which we oven bake now. Maybe over-cooked both a touch but situation recovered with sea salt and digestive track destroying chilli sauce. Five of each left over so breakfast and a snack or two looking good for tomorrow.
Ayam masak merah (Malaysian red curry with chicken) cooked by my missus.
Not as red as it should be 'cos she's can't get a particular Malay chili paste, but I'm not complaining.

Funnily enough, it was actually served separate to the sides in a small bowl on the plate, which you can see in the top right of the picture (I'd just emptied it onto the plate). This was strange though because, as Snubby said, I've always been served Mexican food on the plate in the US together with the sides.
I was thinking about this before because it's entirely the opposite in the UK when you go to an Indian restaurant for some traditional British food, isn't it? Your curries are served separate to your rice/bread which then allows everyone to dip in and take a bit of each one for their own plate.
Anyway, had a go at cooking it today and ballsed it right up. Back to the drawing board with that one.
So it should be. She's been cooking it for most of the last 24 hours . Lot of fannying about to make it, but well worth the effort.
Just stopped raining up here near Pua after 21 hours of steady and at times heavy rain without a break. Was only 26 degrees so the wife and I decided some comfort food was in order. Pasta with sauteed bacon, onion, carrot and a chopped head of garlic in a tomato/basil based commercial sauce. Not too bad. Our growing Labrador pup thought it was okay as well.

^^ looks much nicer than some of that dodgy looking Thai stuff you've been eating. Does your wife cook pasta well? (Mine refuses to, so I have to cook the pasta, and I can't cook...)
