Why do they call it Gold Curry, what's the gold stuff?

I think Gold is the most common brand, but there are loads of them.

They remind me of a bad curry sauce on your chips from a shit chippy back in the UK.

Well may be the case, but that's mashed pumpkin and mashed broccoli.

Steam, mash with butter and S+P.

Actually not bad.

Don't think I've ever had a yam. Will have to keep an eye out and keep the brown sugar handy.
