    Some Norwegian salmon (allegedly ) smadgered with pesto rosso, pan seared and drizzled with olive oil.





    Pesto Rosso (Luigi's Pesto Rosso Bellucci.)

    Comes up good for a relatively healthy Tuesday.

    I was inspired by Guy Fieri to make his Baked Potato Soup. Ticks all the boxes; spuds, bacon, cheese, sour cream. It is a meal in a bowl. Really fantastic! Tweaked the recipe a bit substituting some of the milk with chicken stock and a bit of heavy cream.

    If you're concerned about that just bake some spuds and dice them into a bowl of hot water. Garnish with alfalfa sprouts and tofu.
