I'll go an Isaan sausage as a beer snack if I've got pretty much no other option, but to state that these things are "almost always better than any Euro-type sausage" - cumberlands, chorizos, salamis, salsiccia, saucissons, wursts etc - is borderline insanity.

They're one step up from a 7 eleven hot dog.

I woke up early today with no work till Tuesday on account of the Public Holiday substitution day, I decided to knock up some simpletons pasta type sauce for a few meals.

Sausage, lardon, mushrooms

mise en place.... done

Cheat number 1

All in the pot once the red onion had sweated and garlic softened. Lardons rendering down and sausage cooked.

Ooops.. nearly forgot to season it.... pepper only. There is enough salt in the lardon and German sausages.

Cheat number 2

Beverage chosen

Simples.... innit?

Ready for any type of pasta or rice as a carb.
