Yesterday for the greatest country in the world's birthday, I decided on an 'Merican classic....
Was it the classic, All American burger? Of course not? A hotdog with onions and mustard? Too easy and the hotdogs here taste like the anus of a chipmunk. I'll start a thread on that story in time.
My meal to celebrate America's birthday, was the classic:
Fancy Chili Mac and Cheese
You will dare ask, "What made it fancy?" Well, rather than using the typical box of Kraft Mac and Cheese, I decided to make it an upscale version by using Velveeta's Shell's and Cheese.

Yes, no expense was spared!
To create this All American dish, we (meaning the wife) cooked the shells and cheese as a luncheon side along with hotdogs. Nothing better complements a hotdog that tastes reminiscent of a chipmunk's posterior. Needless to say there was a bountiful amount of the pasta with cheese leftover.
That afternoon, I (meaning I asked my wife to make, using my best whining voice) to make my signature chili, so I might combine the pasta and chili to make this perfect dish you see below. Garnished with the last of the pepperoncini, it was a delightful dinner repast. I paired it with a bottle of distilled water as I had to teach later in the evening.

Nice...and bacon does make everything taste better. It helps balance the carbs from the pasta and the fat from the cheese by adding protein, which makes it a healthy choice as well. :)
As a kid, mom would make mac and cheese and add those fake bacon bits to it. I loved it, even though I knew the bacon bits were nothing more than bacon flavored salt. Thank fuc....fook she didn't serve it with peas or brussels sprouts. We ate healthy back then!
Tonight I asked my daughter what her favourite food in the whole wide world is?
She said, 'steak and kidney pie'... which made me immensely proud.
Then she told me that her Nan's - my mum's - steak and kidney was her best ever and mine came in second. This pissed me off slightly until I thought about it and realised that a global 1 and 2 ain't bad... and who minds losing to their mum?
In Makro last week I found these mini aluminium pie cases which are absolutely prefect. I made a load of pies for the freezer.
