    Keep It Simple Stupid! It is lamb not mutton, so no need to do anything!

    Bring to room temp, cut of excess fat, pat dry with paper towell and coat lightly with canola oil (canola has much higher burning point and is kinder to cast iron than olive oil because of acidity levels) straight on the bbq grill!

    We have some tinned live oil, none is clear glass bottles because light is hard on olive oil, none of that unhealthy Palm oil, and yes the Canola has a high smoke point, about the same as the leaf lard that I render for use in almost all the frying and baking done in my house. something like 500*F.
    and before you start any of this Lard is hard on you, Bullshit, it has the same nutritional values as butter which is a lot healthier than whale oil that is used in margarine. and my family has always used good quality leaf lard and most have lived to see at least 98 years and some over the century mark.

    Exactly. I gag when I see all these lamb chop recipes that is intended to mask the taste of the meat. Good lamb chops taste best cooked the way you describe cooking your beef. Anything else should be punishable by death. After all, the lil good lamb gave it's life for your pleasure. If the quality and taste of the meat is not good enough to eat without drowning in sauces, give it to the dogs.



    Which brings up the idiotic statement that Thai food is good. Fcukin tastes like cardboard, with chillies and spices. The food itself is crap, krap.

    well the thing I have again Thai food is it is so nasty, I have yet to see a Thai washing their hands, well my wife does, but I think she was taught after we were married because I wash my hands every 5 minutes when in the kitchen.
    And ask anyone that has been to my home, I have a stack of 18 kitchen towels and they each get a trip thru the washer at least once a week.
    But beyond that issue is the food stocks are so nasty. laying around the market with flies all over the meat, veggies and then the worms and grubs inside the cauliflowers and even cut open a bell pepper and it was fill of maggots and not a hole in it anywhere so they must have been in there all the time..
    Plus that, they brag about the 4 flavors sweet, sour, salty , spicy, yep and thats all they got and without lemon grass, Galingal, Chili and lime leaves you have nothing and everything is picked so fucking green that it all taste the same anyway.

    If you are here as a tourist and stay drunk like you should you will love it, but get sober and live here 8 or 10 years and see what ya think.
    Now those that disagree with me,, just how long have you been sober.??

    I love Thai food and rarely eat western food.

    Maybe eat western 3 or 4 times a month.

    My wife is a great cook though....recently I said, just go up the street and get dinner, save the hassle as we had just returned from a long drive. She said....I rather cook myself than eat that shit up the street to often.

    If done right, like my missus does, it is great, very tasty and I love it.....oh and I sober all the time at home, never drink.....except for xmas eve and that is usually the lamb roast spit night anyway.

    Well thanks there Marmite, thats mighty white of ya, but I going out to Big C and the new big Tesco lotus and get some certified veggies tomorrow, maybe some brocolli, and maybe a few artichokes, some big Ortegas to make Rellanos and a nice head of cauliflour to steam in some mushroom soup.

    When I was a kid my grandma had a few bummer lambs every year that were butchered and eaten in our house, my father even had one that I remember or, and during the war while my dad was kin Germany I had to stay with my mother and stepdad who liked sheep meat and I have butchered over 100 sheep in my lifetime, my first wife liked it and she would have it with out kids, I never liked it and Inever will eat it, I visited my Xwife and her husband on many ocassions and she would always have me BBQ a leg of lamb for them as she liked the way i did it,

    My mothers side of the family were Sheep people and ran Hugh bands of sheep in the ochoco mountains of eastern/central Oregon for years before I was born and even after as they were sheep people and my fathers side were Beef cattle people and raised beef cattle on a 9600 acre beef ranch,

    I never heard of Oregon lamb and I am American.

    You really ought to give yourself more of a chance to aquire a taste for it.
    Now is an opportune time!

    I never had lamb when I was a kid. It was one of those things that my mother never cooked for us.
    So that out of a few other things I had to aquire a taste for as I grew older.

    There is an Aussie rack of lamb offered in New Hampshire that is the top shelf on their menu. The Greeks up this way have a way with it as well. Skewered, marinated and then grilled, or slow roasted spring lamb legs in tomatoes with herbs and potatoes. They just know how to pick the little darlings! And that is the secret of "good lamb." A choice pick, the seasonings and the cooking methods.

    Mutton is not worth eating even if you kill the bad taste.
    Compliment the delicious flavor of a fine choice of lamb and you will return for seconds.
