I let the guys hosting the dinner handle the wines. I suggested a few. They made great choices in the end, I'll see if I can find the list. I did this as a quick favor for some guys I met, cost was around 1500/head without wine. It was in a private residence so I wasn't really equipped to put out something OTT. In my place I'd probably do about 2000 - 2500/person and step up the game a little.

I agree. I really didn't accomplish 100% of what I wanted to do. I showed some people attending the dinner photos of plates I've put together in the past and this is one that got picked out. It did taste pretty good. The confit is done in rendered fois gras fat, then there was fresh fg added with the corn, shitake and apple. There was definitely too much corn in this one though. ^In the middle of Pradipat Soi 10 near Ari or Saphan Kwai BTS. I closed the old one after I found a better building on the same street. First floor of the Roomie Hotel. Its closer to Saphan Kwai but b/c of the way traffic runs its easier to take a tuk tuk from Ari. Just tell them Pradipat Soi 10, its about a 5 minute ride, don't pay more than 30 bt.

Can you alter the type face - that "spider footprint" one is hard to read.
As a long time supporter of the Bill Fish Foundation I would prefer not to see Marlin on the menu

As for Marlin, its not something I use regularly, I only got it this time b/c they were out of the snowfish I wanted, Marlin was the only one available. I know sometimes my food is not the most animal rights friendly (foie gras), but I try to consider peoples values when I can. Do they commercially farm Marlin at all or is all of it wild caught? I like the taste but if its an endangered fish I will stay away from it.
It is endangered here in East Asia ( Blue and Black Marlin ) but white or striped Marlin from The Caribbean are plentiful and taste the same !!
They are mainly caught by long line and not commercially farmed.
We catch them around Phuket on sport fishing boats but all strictly "catch and release" - having said that though on the rare occasions that one does die on us ( sailfish as well) Ehem ! Yum Yum !!!

^When I asked the sales girl where the Marlin was from she told me Alaska . So I doubt they will know what kind it is either. Probably should just stay away from it in general then, there is plenty of good fish here.
