    TeakDOOR Mexicali Madness

    I have finally got my my shit together and my ducks in a row to take a long overdue swing at Mexican again as I have been promising myself for years.

    I used to make a mean Chilli Con Carne back in my 20s but is probably 35 years since I did, so here I go....

    While we are waiting for the main course the mexi-thread has been photo bombed by a 1/48 OV-10 Bronco observation plane. Designed for short take-off on improvised jungle runways in 'Nam

    And the infamous Mach-2.8 Mig-25 in 1/72, designed as an interceptor for the US supersonic strategic bombers B-58 Hustler and its successors


    I will be augmenting the packets with secret spices authentic herbs, but the basic packet usually gets you pointing in the right direction I find.

    Senorita came by with an aged care meals-on-wheels food care package of 4 huge servings of curry

    But she was keen to sample the Mexicali madness I have been verging on this month so I made a plate of chilli and grilled cheese layered on nachos with salsa and sour cream sides

    She polished off the lot with no help from me while I nibbled at the salmon sandwiches she had nabbed from the oldies

    Had a go at the fajitas mix in the Mexi mix bag

    Chicken takes longer to slice than Indian curry since it needs to be longer strips. Fry the onion and chicken as I went slicing.

    There is a bit of an art to peeling apart flour tortillas without them sticking to each other and ripping

    Then tried the powder which had a bit of a BBQ sauce flavour which was not so good

    Wasn't sure what to do next so put some cheese on them to go with the salsa

    Grilled with Mexican chilli sprinkled on top. Pretty yummy all up.

    The weird thing was that when I went back packing in Mexico 30 years ago I did not see CCC on any menu anywhere once.

    I get the feeling it is not entirely kosher mexi-scran
