Made some of this a couple of months ago, still have two portions in the freezer.
Having made the soup, crisping up the croutons made from sliced baguette.
I usually have mozarella in the fridge, so that was used.
Your croutons are getting too big for the bowls.
Different style croutons for French onion soup, they need to be able to carry the additional weight of the cheese, and normally made from sliced baguette. This has got me in the mood for one of the portions I have in the freezer, but am out of baguettes so just made a 'poolish' to start a batch of baguettes tomorrow morning. The 'poolish' ferments overnight.
An explanation. I make it with a mix of 150g/150g flour and water mix, with a pinch of instant yeast.

I didn’t know it would freeze well until you mentioned it. A few more excellent easy meals.
Been quite busy the last couple of days, however today I got around to the French onion soup. The soup itself was just a case of defrosting a couple of portions out of the freezer that I'd made a couple of months ago, and reheating it. So, first thing, a baguette out of the freezer and sliced into large croutons. These were then fried in butter until crisp and golden.
Once cooled, each crouton rubbed with a raw garlic clove.
M'Sahib's having hers minus croutons and cheese, just bread rolls on the side. Mine, croutons on top of the heated soup in an oven proof dish, grated mozarella on top, and under the grill in the oven until melted.

Got around to making the Butternut Squash soup.
I didn't take a before pic, but you have to peel, seed, and chop the squash. This takes some time as the squash is hard to peel.
Recipe calls for a granny smith green apple.
Lotsa garlic
Instant pot high pressure cooker for 8 mins, release the steam. I used the immersion blender to blend.
Recipe.. very delicious... added some coconut milk on top. Also added a tsp of stevia to give it a bit of sweetness.

About the chicken and rice soup. More like paste/chowder, now.
Years ago; when I first started visiting Thailand, whatshername took me up north when it was a little cool outside.
The resort we were staying at provided a free breakfast and a chicken and rice soup was offered.
It was good. If fact, if we are staying in a resort that offers a chicken and rice soup, I will get one bowl.
Whatshername will tease about the amount of chicken (lack of) in the soup when we are out. I solved that minor problem.
Looks more like a chicken rice porridge.
