I cant remember if I was taught that and forgot or if I was not taught that, but certainly for years I have been pouring the milk on cold in a oner as soon as the flour/oil roux is bubbling hot.
I do remember being taught that the roux itself does have to be bubbling hot before pouring the milk.
I have certainly never had any problems when pouring the milk on cold from the fridge in a oner.
The only thing I would counsel against is trying to use milk that is not fresh. If the milk is near the use-by date then don't try and use it for white sauce. I think the fat molecules start to break down and, even though the milk does not smell, and tastes OK, it will curdle when you heat it with the oil and flour.
I think you are on the money with this idea Katie. I would be tempted except that I have calibrated my carrot and potato batch portions to align perfectly with the FPS batch size
You can freeze white sauce Mendo. So ergo you can freeze your FPNS.
I, on the other hand, have my potatoes and carrot portions lined up with machine-gun precision so I am committed to a stress test of the shelf life limits and I am aiming to broach the 10 day barrier if Senorita is a no show for her fishy feed

Aesthetically challenged and looks like a soupy stew but tastes just the same as normal.
This method is definitely for flying solo and not for guests
I thought I'd try a breakfast FPNS by adding an egg. I have to get rid of the stuff somehow.
I won't be doing this again.
In fact, I haven't really enjoyed the whole FPS experience.
I was also thinking some smoked haddock or salmon with the white fish would make a great addition to a fish pie.
Shutree's fish pie looks pretty good.
The egg doesn't damage Mendip's fish pie at all, imho - maybe an improvement even?

Senorita caught it just in time as it was about to spill in my lap as I took the obligatory photo (the modern version of saying grace) as it was served during the movie intermission
My FPNS had an ignomb... an ignobimb... an ignibi...
My FPNS had a sad ending but at least I got some veg into the dogs. They love a bit of fish.
I'm surprised that the FPS of Looper and Mendy lasted this long! They even outlasted the glitch in the Matrix, er... in TD. In Mendy's case, I hope the dogs don't get the runs later on.

I did not go number 2s for the whole weekend Friday->Monday, which was highly irregular for me, so I think FPS may have the opposite effect on the colonic constitution.
Monday night was the last serving of FPS, which was day 9 and I think this is the coup'de'grace in terms of presentation
The bowl works better than the plate and gives it a vaguely pie-ish shape

OK.... So here's my take. It's more of a FPSTA (Fish Pie Surprise Tuna Alfredo) and made it with pasta, not potatoes.
The tuna & the veg (carrots, squash, beans, peas)
I planned to add some minced dried fish (w/o head) into the sauce. I didn't have those dried baby shrimps.
While the pasta was cooking, I prepared the veg. This is the pasta cooked & drained (macaroni - it's what I had). I saved the pasta water to use for the sauce.
I cooked/ sautéed the veg first, then set aside
I made a roux, then added 1 glass of milk (~250 ml). I also added some of the pasta water. To season, I added S&P, dried oregano leaves (home made, oregano was from mom's garden), dried rosemary leaves (store bought).
Here's the final sauce, with tuna, veg & minced dried fish added.
Here's the final product on a bowl, with fresh oregano leaves. It's not pretty I know, but it tasted OK.
Here's a 2nd portion, for tomorrow's lunch. I think this looks prettier. Lol.
I was able to mix 2 portions of the sauce with the pasta. There's a 3rd portion that I'll put in the freezer and eat with rice (or potatoes) later on.
The FPSTA was OK - not one of my best efforts. Maybe next time, I'll add some of this Knorr into the sauce, to give it a mushroomy kick.

^thanks, Mendy. It's a small pan, 9 inches in diameter, so there aren't too many portions - only 3 portions total. I can't do what Looper did - cook 10 portions!
Unfortunately, Seis is not around anymore. He died last November and is now serving as fertiliser for my mom's plants. (Thnx too for remembering my old dog Seis. I miss him - he was a good boy.)

A pie without pastry is a fail in my opinion, nothing wrong with fish stew , Cullen skink and clam chowder some of my favourite starters

That is a small white sauce batch by my 2 litres standards
It was actually 11 portions since it was served on 10 consecutive nights (last one was 9 days after the 1st one) and day 7 was a double serving
The last 2 portions were huge also as I was hungry Sunday/Monday so I could have stretched it to 12 portions possibly
Anyway I totally miscalculated the potatoes and carrots and had heaps left over so it went into a butter chicken curry
Now on close of play day 2 with a projected 4 day test required to get a result
