M'Sahib got a couple of nice chicken breast fillets yesterday as well as some ham and cheese, so thought I would try something different. Never made cordon bleu before, and usually have it with pork when eating out. Pretty simple really, make a pocket in the meat and stuff cheese and ham into it.
This is then covered in a mix of egg and flour, before wiping in breadcrumbs. I should really have put a few slices of bread in a blender to make the breadcrumbs as the one's M'Sahib keeps in stock are a bit on the large side. I baked the chicken rather than frying it, so baked the breadcrums sprayed with oil in the oven before using them.
Sides were roast potatoes, and honey and garlic butter roasted carrots.
To finish it off, made a mustard and parmesan sauce.
Chicken was lovely and moist and well cooked which was a relief as the breast was quite large.
