    Saturday is always a busy day in the Mendip household... for me anyway.

    With the plethora of Thai 'comedy' shows available on the tv during Saturday afternoons, the wife rarely veers from the horizontal. This is fair enough as she has busy weekdays.

    But before she retired, exhausted, early tonight my wife prepared a duo of mango pudding.



    But bollocks to that... it's Saturday night! That fruit stuff can go in the blender in the morning.

    What we really wanted was lightly microwaved doughnuts covered with homemade custard!



    The daughter always goes for strawberry jam filled doughnuts, I like the yellow 'custard stuff' filled doughnuts, although the contrast is poor against my homemade custard and doesn't look so great on photos.



    And then we had the nightmare scenario of finishing our doughnuts while there was still some custard left. No problem for an old pro... I simply cut the blueberry doughnut in half, 20 seconds in the microwave, and we shared.

    ^Speaking of which, when are you off to Bangkok?

    Here's a terrible pic of what was actually a very nice piece of sticky date pudding. Don't normally have dessert when eating out but saw it on the menu and couldn't even remember the last time I had one.

    A bag of lemons have been staring at me from a fridge drawer for some time, so lemon meringue pie it is.



    Got the pastry started, sieved some flour with some butter and lard to be rubbed in.



    Rubbed into crumbs.



    Added a drop of water and turned into a ball which went into the fridge for half an hour..



    Rolled out and put into a flan dish.



    Covered in tin foil, with baking beads on top and into the oven to be blind baked. After 20 minutes, foil and beads removed and a further 10 minutes baking.





    Getting organised for the lemon filling and the meringue.



    Cornflour, caster sugar, lemon zest and juice, beaten egg yolks and butter brought to a simmer and cooked until thickened.



    Beating the egg whites and sugar for the meringue.





    Assembled the pie.





    Back in the oven for 15 minutes.



    There you have it, great with an afternoon coffee.

    ^ Home made custard ain't exactly easy you know!

    That does look good PAG. I wonder if lime merangue pie is a thing? We're inundated with limes at the moment... would give me something to do next week.

    Quite a few recipes for 'Key Lime Pie', which can be made with a meringue topping. A biscuit base (a la cheese cake) instead of pastry makes it very easy.

    I'm buying a lemon tart tomorrow at Big C, thanks PAG for reminding us how delicious lemons can be in desserts and how useless the rest of us are that can't bake like you

    ^ Packed and ready to go, but it's only a short visit. I'll be cooking again before I know it.

    ^^ Thanks PAG... but pastry no problem for me, it's one of my stronger points in fact. I'll check out the recipes.

    I missed that... but we've got coconuts as well at the moment, and my food dehydrator. Apart from the digestives, sugar, butter and cream cheese I can get everything from the garden.

    The strangest thing PAG... I checked out your Jamie Oliver New York City lime cheesecake recipe and got this...

    I thought it would have been a bit fattening but this girl seems to look OK on it.

    Homemade custard is indeed hard to get right, mine always comes out a bit lumpy.

    Nice one PAG, That lemon meringue pie looks epic. I've always wanted to try one after seeing it in Fear and Loathing, that is a great bloody scene!

    Sometimes I think PAG should have his own thread... it puts so much pressure on anyone who follows.

    There is no 'Blokes' pudding thread or 'Drunk' pudding thread... so where to post? By this stage of last night I had suffered from trying to finish off a bottle of Ya Dong. I hate waste.

    And besides, whatever they look like, puddings always taste great!

    Lightly microwaved custard-filled doughnut with chocolate chip, chocolate ice cream!

    ^ Not for me... not with those evil currants occupying the cake. The meal on the left... on the other hand...


    I very nearly graced this thread with a picture of my 'apple suet pudding', having found a block of Atora in the fridge (which I have been wondering what to do with for some time) and a bag of neglected apples in the veggie draw.

    Sadly I discovered the apples had since gone bad and been fed to the chickens... so chocolate 42.75 Baht cake with home-made custard it was!



    Money... (you can't go wrong with custard!)

    With Mini being at an international school, her school mates are scattered all over the city, the distances involved making it difficult to have friends over in the evening. To pick up and then drop off a kid could easily mean a couple of hours driving the way Korat traffic is.

    But in saying that and hopefully without sounding a bit scheming, Mini has one young friend in particular I'd like to come over and visit... she has an absolutely cracking mum, single, who I imagine would love some basic English meat and two veg followed by a bit of trifle.
