    Cut up the veggies and made the mojo marinade today. Will put about a 1/4 of the marinade in the veggies and the rest in with the skirt steaks in the morning. Instructions say don't marinade the meat overnite because the acid in the marinade can start cooking the meat. So I'll probably give it about 6 hours in the marinade tomorrow.





    Will grill the steaks on high about 3-4 minutes per side. Haven't decided yet how I'm going to do the sweet peppers and onions. I need a grill pan for the BBQ but don't have one...yet.

    Skirt steaks salted and peppered for overnite. Will put the mojo marinade in the bag first thing in the morning.

    ^ yup...damn that marinade smells good too.



    Bought some pre-made Pico de Gallo but did some editing with more tomato, onion, jalapenos and cilantro.



    Also made a batch of my own refried beans. A can of dark red kidney beans with white onion, garlic and a few spices. Simmered on medium a few minutes than in with the immersion blender. Don't mind the old crappy pot, it's the one I'm allowed to use for things like this.

    I'm wore out and didn't get good enough pics to justify how good these fajitas were. Here's the skirt steak before cutting it up. Resting at this point.



    Some of the choices to put on the fajitas...forgot to get everything in the pic.

    Something must be going on with the cam in my phone, picture quality is going downhill. Not sure why...;probably need a new phone by now.

    Or maybe I should shitcan that app I downloaded. That's when the pic quality started changing. Storekeeper repo'ed me a few posts ago and said it looked liked too much work. He's right...I slept 10 hours last night. Maybe next time we'll just go to the local Mexican restaurant.

    Snub is right too, I should have used my wife's Apple phone...if she'd let me. Thanks for the input guys.

    Alright I cleaned the lens and using no app...this is a test of something that was handy. Any better quality?



    And here's the original pic of my plated fajitas without the app...but still dirty lens.



    Hmmm...may have been operator error and just piss poor picture taking. I'm gonna blame it on me not getting my usual nap yesterday.

    Nope...I used kidney. Traditionally it's usually pintos for refried beans. I just like kidney beans better.

    Are hairycots the ones in your breakfasts?

    No wasn't that...didn't use the smoker on this go around. Might do that next time for fajitas. Slow smoked skirt steak and some smoke on the veggies might be the ticket.
