I was gonna say that seabass is a bony fish and whenever I've had it before it's been steamed or fried whole and sliced/served after that.
You do your thing though, Chits. I think you might have a bit more to worry about than just one bone though.

The trick is if you fry them long and hot enough then they crumble in uour mouth like a fishy pork scratchings.

I think he tried but discovered that trying to fillet saggy sea bass three days past its use by date with a chefs knife instead of a filleting knife is not an easy job.
