    And what does it say about Pommes Lyonnaise - notice the pommes part there - it's not just about the Lyonnaise, we all know about the onions, but in POMMES Lyonnaise the potatoes are required to be prepared in a particular way. You've already said that the Larousse specifies the correct way of doing this so what does the REAL Larousse say?

    Round slices? That would be utterly unlike the spuds in the OP then? It would seem that the Larousse, Escoffier, and Montagne say that Pommes de Terre Lyonnaise are round slices of potato served a la Lyonnaise and not just potatoes chopped up any which way. You say otherwise. You are wrong.
