For you folks that don;t know what okra is you may ind you have another name for it.
Okra:
Rinse in cool water & dry, then slice it up like n the picture thicker, thinner it's really up to your preference but if you've never had it this works for me:
Take drop the sliced pieces into a bit of flour and coat them nice and even:
This'll help the egg & milk mixture stick to the okra,
remove the okra with a fork or somethng that will get the okra and no extra flour out Dump them all in an egg-milk mixture Here is one egg and maybe a fat Tblsp of milk, I added some fresh ground pepper, chili flakes are good too
Get 'em coated nice & even-like using that fork again remove the coated veggies leaving behind as much as you can of the egg-milk (some folks'll dup the whole mess in to the cornmeal and that's perfectly Ok you get more of a okra hush-puppy/fritter then but it can tasty.
Drop em all in enough cornmeal to coat nice and thick-like
Get a pan of med-hot oil ready, this can be bacon drippings if you like I prefer to use vegetable oil myself. you don;t want it too hot they should brown up nicely in about 7 - 10 minutes. The Okara's gonna try and stick together so work it a bit til it's no longer sticky or you'll end up with that fritter anyway... Like I said some like it like that..
Fry this turning or tossing until you get the desired color brown.
This is how I like mine:
Serve and eat! salt & pepper, splash on some Tobasco if you like or that mild Louisiana Pepper sauce.
