    Kurgens spinachy stuff n pasta bake

    I asked the wifey to get some spinach but she came back with something called aramanthus. Sher swears it was spinach but I'm not so sure so we'll call it spinachy stuff.

    Right, here's the ingredients. I only used about a 1/3 of the pasta and 6 chillies though.


    I boiled the spinachy stuff 1st and boiled the pasta.

    Everything else apart from the mozzarella got thrown in a pan and heated up.

    I mixed the pasta in with the sauce and about 1/3 of the mozzarella and threw it in a baking dish.

    I then covered the pasta with the spinachy stuff and topped it of with the rest of the cheese and whacked it in the oven for 20 mins at 200 deg's.




    It luckily tastes much better than it looks.

    Needs some meat besides it. Preferably a full rack of bbq ribs.

    Should have lightly steamed it or wilted it in a covered frying pan/wok with just a couple of tbsps of water. Stops it getting soggy & keeps the nutrients in it. Looks quite tasty, though. Might try it. Mr NR & I are doing at least 3 nights veggie per week at the mo

    haha, well you can get grass fed beef which is healthier than grain fed beef.


    That dish looks awesome, Kurgen. Never heard of aramanthus.
    I eat alot of spinach in salads, stirfries and just on its own cooked for a few mins in the microwave.
