Foodland had some great bone in pork chops on sale last week. I got 3 big ones for less than 200 baht. I have decided to saute them off them cook them in my barbecue stock I have been making for a couple of months. I will serve them with roasted potatoes, onions, and red bell peppers. Plus the maid has shucked up a couple of ears of corn for me to do up as well.
The potatoes after going in the microwave for 2.5 minutes then chilling down, added some coarsely chopped onions and bell peppers. The main spices are simply an Italian seasoning mix, cracked black pepper, and a seasoning salt called Johny Spice out of Washington state. Add the spices, drizzle with olive oil then add to the baking pan. For these I do about 30 minutes at 160 covered then the last 15 minutes on 200 under the broiler.
So first we have the potatoes and veggies, ready to be seasoned and tossed.
The we season, and toss with our bare hands to get a nice coating.
They are then transferred to a baking pan, I like to coat mine in aluminum foil, for ease in cleanup.
Now we have the chops, I have had them marinading in my blend for over 48 hours, I added a pork loin at the 24 hour mark hoping I might get a sandwich tomorrow. The bottle contains the barbecue stock. Its about 4 cookings in now so its great to braise the chops in. I keep it in the freezer so the oil has come to the top.
So I have 20 minutes to relax and then its time to go down and brown off the chops then braise them in the sauce for 40 minutes. Do the potatoes as well. I sure am glad I have 2 ovens.
