    Pork Chops, Roasted Potatoes Oven Style

    Foodland had some great bone in pork chops on sale last week. I got 3 big ones for less than 200 baht. I have decided to saute them off them cook them in my barbecue stock I have been making for a couple of months. I will serve them with roasted potatoes, onions, and red bell peppers. Plus the maid has shucked up a couple of ears of corn for me to do up as well.

    The potatoes after going in the microwave for 2.5 minutes then chilling down, added some coarsely chopped onions and bell peppers. The main spices are simply an Italian seasoning mix, cracked black pepper, and a seasoning salt called Johny Spice out of Washington state. Add the spices, drizzle with olive oil then add to the baking pan. For these I do about 30 minutes at 160 covered then the last 15 minutes on 200 under the broiler.

    So first we have the potatoes and veggies, ready to be seasoned and tossed.



    The we season, and toss with our bare hands to get a nice coating.

    They are then transferred to a baking pan, I like to coat mine in aluminum foil, for ease in cleanup.







    Now we have the chops, I have had them marinading in my blend for over 48 hours, I added a pork loin at the 24 hour mark hoping I might get a sandwich tomorrow. The bottle contains the barbecue stock. Its about 4 cookings in now so its great to braise the chops in. I keep it in the freezer so the oil has come to the top.


    So I have 20 minutes to relax and then its time to go down and brown off the chops then braise them in the sauce for 40 minutes. Do the potatoes as well. I sure am glad I have 2 ovens.

    Those pork chops are "country" chops, damn good eating.

    Well lets see how it progressed.
    So we have the spuds half done, time to put them under the broiler.



    Now the corn, the cobs, all separated by Uwe by maid, friend, and almost in reality oldest daughter. She is looking forward to this meal. Just boiled 4 minutes then cooled, and put in the bowl. Add nice sweet butter an cracked black, the just microwave a minute before serving.


    The kids found that bottle of pepper on their trip home last summer. Its whole peppercorns with a grinder built in.

    The we browned off the meat. Its not cooked through at all that will be done in the oven.


    Coming out of the oven, with the braising juices still there. I added them back to my bottle and its topped up.



    the potatoes, bell, and onion nice and brown and crispy on the outside.



    On the table.


    Notice the barbecue sauce. Its out of Australia. Called Fountain Smokey. Its the real deal, puts anything by Heinz or Kraft to shame, look for it.

    Plated, and then all was devoured, notice the kids have already started on the meat, nothing left for a lunch tomorrow.

    Looks decent, I woulda left the chops on the barbie a while longer though, are they still leaking blood ?

    No they were done in the oven, trying something new for the kids. 160 for 40 minutes in a stock covered. They were well done in fact. A bit to done. I am still getting used to my new stove oven combo, and did not put them up to brown. Good point mate. The barbecued fillets are on another thread.

    Its all about how to cook easy for 2 kids and yourself in a minimum of time because you are freaking busy. Thats why there is a lasagna and about four, 3 serving bags of ziplock marinara sauce in my freezer.

    You cant be that busy going to the extremes of an oven to cook some chops.
    I buy the same and they are superb after 12 mins on the BBQ....... lucky your not strapped for time and can let them languish in the oven for 40 minutes.
