Oh Tao- local Phuket food
Oh Tao is a pure Phuket local food since you can't find it elsewhere, only in Phuket. It's similar to crispy oyster pancake, but softer. It's local food; some take it as a light meal. Most Oh Tao recipes are inherited from their family's special recipes. The dish is similar to Hoy Tord or crispy fried mussels in Thailand's central region. For some it might be similar to a Chinese dish 'Or Suan'. Oh Tao's main ingredients are rice flour, local oysters, taro, eggs, and pork crackling. All the ingredients are fried together. It comprises rice flour, taro, local oyster, garlic, crushed pepper, pork crackling and egg. Just fry together. It is best served with fresh bean sprouts. It's a combination of tastes like sour and salty. It depends on individual taste. Some like it hot, some like it spicy hot! Oh-Tao needs to be served with bean sprouts. Then it won't be bland. Oh Tao is mostly served from mobile vendors with a cart on wheels. They are mostly available from early evening before dusk until late at night. The best known places for Oh Tao in Phuket town are: a shop on Poonpol Road behind Kusoldham Foundation. Please come to my shop. It's authentic. Or a mobile vendor in front of Tessaban Ban Bang Niao School on the way to Saphan Hin. A first time taster agrees that it's delicious. Please try Oh-Tao at Bang Niao. It's very delicious!
Apart from being a famous tourist destination, Phuket is also good for cuisine, especially in local flavours with its unique style and tastes. How to Make Vermicelli Pad Thai Noodles
Ingredients:
Vermicelli noodles (or rice noodles)
Pad Thai paste (or you can use chili paste, peanut oil, a dash of sugar, fish/shrimp sauce)
Lime/lemon juice
Cilantro diced
Green Onions diced
crushed peanuts
1 whisked egg with pepper
Shrimp
mung bean sprouts
Tofu cut into cubes
Oil
Vinegar
Directions;
1) Boil shrimp till fully cooked, don't forget to boil the vermicelli noodles in a seperate pot as well!
2) On a wok or pan stir fry the vermicelli and shrimp with olive oil and vinegar. Add the cubed tofu and diced gren onions as well.
3) After about 5 minutes add Pad thai paste. Throughly mix the paste into the mixure till it is nice and even.
4)Stir fry the mixure for an extra 5 minutes and add your whisked egg. Again, mix throughly within the noodles.
5) Once fully cooked, turn off the stove and add mug bean sprouts. Spritz lemon/lime juice if desired.

Ingredients and directions;
1/2 pound of boneless chicken diced.
Marinate with 1 Tbsp of Soy Sauce and 1 tsp of cooking wine for about 15 minutes.
Fry in wok till chicken is cooked on med heat and then put to one side.
Heat new wok and add 1/4 to 1/2 cup of cashew nuts, 1/4 to 1/2 cup of diced carrots, 1/4 to 1/2 cup of cut celery and 1/2 a cup of baby sweet corns till cooked, once cooked add your chicken.
Now add 1 tbsp of sugar, 1 1/2 tbsp of oyster sauce, 1 tbsp of soy sauce, 1 tbsp of seasame oil and 3 tbsp of chicken broth, mix well on med high heat for about 30 seconds and then serve.
