I reckon the test will be leaving it all long enough to mature without the constant tasting, you might find the barrel to be empty when matured.

OK, new batch is out.
Been giving it a rest while waiting for my liver transplant :snigger:, the 7 months in two casks have made an awesome tipple.
Gone smooth with a woody flavour - oak & chestnut, and taken on some of the Sherry flavour which I stored in the chestnut barrel before.
What would you mix that with?
Would you risk drinking that neat , looks a bit lethal
I always drink spirits neat. This one is less than 40%.
Sip it slowly, plain water chaser if need be.
Too dangerous for me to sip spirits neat, end up guzzling when I'm pissed
