Thai Yam Beans or Man Gaewมันแกว(มันสำเภา), are eaten raw or cooked in stir fry's, Thai soups Gaeng Jut style or thai curries.
They have a sweet, slightly earthy taste when raw and are very crisp,
crunchy and refreshing.

I will put up some video tomorrow for anyone that's interested. Sometimes the riding was just too good to stop and take photos!
