Runny egg is best but take more care with the white. I agree on cutting the sausages in half. Sauce or mustard to your own liking but mine would be a little browwn sauce. Bread to your own liking, but untoasted. Mine would be brown or wholemeal bread.

@betty - why would anyone want to eat a sandwich with knife & fork? Isn't that defeating the purpose of being a sandwich? The Earl of Sandwich was a gambler, right? And he wanted a meal that he could eat w/ his hands & not have to leave the gambling table - or so I've heard...

Or are those chavs (pardon the term) trying to be more posh by eating w/ a knife & fork? If that's the case, then they need more of this.

You are of course correct, Katie.

But, I slightly cheated by showing folks with an English Breakfast rather than a sandwich. Having said that, I always ordered up my English Breakfast with some bread, so I could make a sandwich out of the sausage and egg (which I ordered extra of for that purpose)...

I'm more of a yob than Tax.

I'd have to disagree with you there. Brown sauce makes men and men make brown sauce.

Why not throw some kimchi on the top of the last egg....I bet that would have made an even yummyer sandwich.

Agreed, although I prefer brown sauce with egg or mustard without egg but not both together.

And it has to be Coleman's mustard, none of that squeezed on yuk.

Only homicidal maniacs would think scrambled eggs or an omelette goes into a sausage sandwich. Sorry tax and Katie.

Bagels are not gay! They are a man's food!

Kimchi is horrible. Korean food is horrible.

Brown sauce is not right for an egg and sausage sandwich because you want to taste the ingredients rather than being overwhelmed by a sauce.

Scrambled egg might make it onto one of Dirk's bistro sandwiches, but not on a greasy spoon cafe sandwich.

I rather like kimchi, but I do understand some palates aren't as refined as mine. I prefer mayo with eggs, mustard on eggs is for those who, well, need to scale up their tastebuds.

^I like kimchi but I prefer the ones that I've made. The Korean-made ones are too spicy for me. Yeah, I'm a lightweight when it comes to spices. There's a Korean grocery store in my hometown (owned by real Koreans & not Filipinos) who sell homemade kimchi, rice/ tuna rolls (forgot the name) and other eats. Oh, they also sell soju.

@betty - in honour of your thread, I made a scrambled egg sandwich today. No sausages, no pics either.

I have a hike planned for this weekend and I'll make my usual omelette sandwiches for the climb. Cheers!

The OP shows a quite edible effort. I usually use Dijon mustard instead of yellow, but approve of using wheat bread instead of that tasteless white stuff.
