The Horseshoe Crab is much more closely related to spiders and scorpions than it is to crabs.

In Malaysia the Horseshoe Crab is looked upon as a delicacy and there are specialist restaurants where it is the main item on the menu.

Eating Horseshoe Crab is a bit of an exagerration because there really isn't anything about this odd looking creature which is edible apart from the eggs or roe. There are several ways in which you may be presented with the roe.

The most basic is when the whole Horseshoe Crab is grilled and then presented to you on a plate. With it laid on its back you peel back the underside of the shell from the front and extract the roe with a spoon and eat it. The roe varies in colour from orange to green and has its own special sea-like taste with a not unpleasant rubbery texture. Some say that the green eggs are to be avoided whereas others will eat both. As the eggs of the Atlantic species are mainly green in colour it is hardly wise advice if you travel or consume imported foods.

As an alternative to grilling, the whole Horseshoe Crab can be slowly immersed into boiling water for around three minutes. After removal it should be allowed to cool before the roe is removed and washed. The roe can then be mixed into salads such as 'Yam Khai Maeng Da' or Som Tam to give them an extra bite.

Alternatively the roe can be removed after cooking and mixed with egg to make an interesting and somewhat crunchy omlette.

Very little meat on them as already mentioned - however the eggs make an excellent Larb or Yum.

Not wanting to discourage anyone but they are not actually Crabs - they are more closely related to Spiders.

    Liao Y, Li X.
Fisheries College of Zhanjiang Ocean University, Zhanjiang 524025, China.
During the past three years on investigating and studying the poisoning of eating Horseshoe crab, it has been discovered that the major cause of the poisoning on eating Horseshoe crab in south region along the seacoast of China was taking tetrodotoxin from Carcinoscorpius rotundicauda by mistake; the symptoms of some others from eating Horseshoe crab were the result of allergic reactions from eating Tachypleus tridentatuscause, similar to the reactions from eating shrimp or crab, and which could be cured with chlorpheniramine. The effective prevention measures are not eating Horseshoe crab, especially the young ones. The size of young Carcinoscorpius rotundicauda is similar to the size of the nonpoisonous Tachypleus tridentatuscause. It is very easy to be confused and easy to eat by mistake. The treatment of the poisoning from eating Horseshoe crab is similar to the treatment of tetrodotoxin by removing the toxins from body.

    Just an interesting (perhaps) factoid.

The Thai word for Horseshoe Crab is "แมงดา" Maengda - which is also the Thai word for "Pimp".

This word relationship comes about because of the mating habits of the Horseshoe Crab in which the Male rides on the back of the Female for extended periods while impregnating her - just as Pimps figuratively ride on the backs of their girls.

OK, maybe not as interesting as I thought it was!

We had lots of the ugly sucka's in New England and Florida but never seen them for sale as food anywhere until I came to Thailand. I was always told they were basically inedible but seeing how the Asians eat pretty much everything no surprise they eat 'em in Thailand.
I'm not saying it was Aliens, but it was Aliens!

Nam prik maengda is absolutely the best thing to smear on a Thai omelet when you put it on rice of a morning.

Are you confusing Maengda the insect with Maengda Thalae the crab ?
The stuff made from insects is lovely.
I tried the horseshoe crabs once about ten years ago, never again.
